Pupusas y Curtido

This is one of Michaelyn's favorite meals! It took me a while to learn how to make them and then how to perfect them...but now, not only have I made the instructions easier, I have also made them WW friendly!



Ingredients

- Ma Se Ca Corn Masa Flour, Instant, 2 cups

- Water, add as needed

- 0-Point Fat Free Refried Beans, 10.5 ounces or one can

- Fat Free Mozzarella Shredded Cheese, 2 cups or one package

- PAM Cooking Spray, as needed


Other Items Needed

- Ziploc Bag, Large

- Small bowl with water

- Small to medium sized plate, plastic preferred

- Griddle


Directions

1. Preheat Griddle to 440 degrees.

2. In large bowl ix the masa flour with enough water to make it pliable, do this a little bit at a time. It should be soft like dough, but not so soft it slips through your fingers. (Think, the same texture as playdough.) Set Aside.

3. In medium sized bowl, mix together beans and cheese.

4. Take Ziploc Bag and run some water into it, "sloshing" it around until the inside of bag is wet.

5. Now, take a medium sized amount of the flour mixture in your hand (usually about the size of your palm). Make it into a ball, then press your thumb in the center, making a kind of well in the center of the ball. Now, add about 4 tablespoons of bean mixture into well. Roll back into ball. This does not have to be perfect, beans can show.

6. Place flour ball filled with beans into Ziploc bag. Now, using the plate, press down on ball making it into a "pancake" shape.

7. Spray PAM onto entire griddle surface. Take uncooked pupusa from Ziploc bag and place on griddle (you can go ahead and repeat the process, to fill griddle and make many at one time. Or, you can make one at at time.)

8. Allow to cook for about one minute, before you flip. You will have to flip, every once in a while, making sure they cook evenly one both sides. They should be firm to the touch, but still be pliable. Allow them to cook on each side, until they are slightly brown on each side.

9. Serve with Curtido and Enjoy!



Makes 7 servings. 4 Freestyle points per serving.
