Crema Rosa Pollo

When a Latin classic comes together with an Italian sauce.



Ingredients

- 5 boneless, skinless chicken breasts cut in half

- 1 cup cherry tomatoes

- 1 large onion, diced

- 1/4 cup I Can't Believe It's Not Butter

- 1 cup fat free milk

- salt to taste

- pepper to taste

- garlic to taste

- parsley to taste


Directions

  1. In large skillet add in and 1.8 cup of ICBINB, tomatoes and onion. Saute until they are nicely browned. Lower heat of the skillet.

  2. In food processor or blender, add in the cherry tomatoes, onions and milk. Blend well. Place to the side.

  3. In skillet, on medium heat, add in the other 1/8 ICBINB and chicken. Season chicken to your liking. Brown chicken on each side.

  4. Lower heat and add in crema rosa sauce. Leave skillet on low and allow to cook, covered, for 20 to 30 minutes, or until done cooking completely.

  5. Serve & enjoy!
