2-Point Cupcakes

WHAT?! Did you read that right? YES YOU DID! 2-point cupcakes WITH icing!


Cupcake Ingredients

- Sugar Free Devils Food Cake Mix, 1 package

- 0-Point Unsweetened Apple Sauce, 1/2 cup

- Vanilla Extract, 1 Tbls.

- Eggs, 3 medium

- Plain, Non-Fat Greek Yogurt, 1/2 cup

- Almond Extract, 1 tsp.

- Coke Zero, 1/8 cup

- PAM


Other Items Needed

- Cupcake Liners

- 12-Count Cupcake/Muffin Baking Pan


Cupcake Directions

1. Preheat oven to 375°. Prep cupcake baking pan with liners. Spray liners with Pam.

2. In large bowl, mix together all ingredients thoroughly. Fill cupcake liners half way.

3. Place in oven for 19-23 minutes, or until done. The cupcake with “bounce back,” against your finger when done.

4. Remove from oven and move to cooling rack or counter. Allow to cool BEFORE adding icing.



Icing Ingredients

- Fat Free Cream Cheese, 1 block (at room temperature)

- Swerve Confectioners Sugar, 1 1/2 bags

- Vanilla Extract, 1 Tbls.

- Almond Extract, 1 tsp.

- Fat Free Milk, 1/2 cup

- Wilton Gel Food Coloring, very little (optional)

- Sprinkles, as needed (optional)


Icing Directions

1. In mixing bowl, mix together all ingredients except milk. Now, add milk into bowl SLOWLY. You might not need it all and the icing might become too runny. Icing should be thick. Add food coloring, if desired.

2. Add to tops of cooled cupcakes. Add sprinkles, if desired.

3. Serve & Enjoy!



Makes 23 servings. 2 Freestyle points per serving.
