Pineapple Dream Cake

Go ahead, float on that cloud filled with pineapple!

Cake Ingredients

- Sugar Free Yellow Cake Mix, 1 box

- Plain, Non-Fat Greek Yogurt, 1/4 cup

- Coke Zero, 1/8 cup

- Water, 1/8 cup

- Eggs, 5 medium

- Vanilla Extract, 1 Tbls.

- Fresh Pineapple, 1/4 whole peeled and cubed

- 0-Point Unsweetened Apple Sauce, 1/2 cup

- Baking Powder, 1 tsp.

- I Can’t Believe It’s Not Butter, 4 Tbls.

- PAM


Icing Ingredients

- Cool Whip Lite, 1-16 ounce tub

- Fresh Pineapple, 3/4 whole peeped and cubed

- Sugar Free Pudding Mix, 1 Cheesecake or Vanilla package

- Swerve Confectioners Sugar, 1/4 cup (optional)



Cake Directions

1. Preheat oven to 325°, and grease 9x13 pan with PAM.

2. Take the fresh pineapple and cut it, making sure to peel and cut into spears. Now, cut all spears into small pieces/cubes. Set aside.

3. In large bowl, mix together all cake ingredients, including the 1/4 of the pineapple. (Save 3/4 of the pineapple pieces for the icing.)

4. Make sure cake batter is mixed together well, and pour into greased baking dish. Smooth cake out with spatula and place in the oven for 35-40 minutes (time ranges on how your oven heats). Check on cake occasionally, trying your best not to open the oven too often. Cake top will be golden-brown in color, when done.

5. Once done, remove from oven and allow to cool completely.



Icing Directions

1. While cake is baking, mix together icing ingredients in medium/large sized bowl. Make sure to mix thoroughly. The ”icing” will start to thicken, once the pudding is mixed throughout.

2. When Cake is completely cooled, spoon (or you can use a spatula) icing onto cake, spreading out as you go. Icing will cover whole top of cake.

3. Cut into 16 slices.

4. Serve & Enjoy!




Makes 16 slices. 4 Freestyle points per serving.
