Twice Baked Potatoes

A little twist, on a classic favorite!


Ingredients

- HEB Lone Star Potatoes, 2 Potatoes cooked and halved

- Simple Truth Uncured Hickory Smoked Bacon, 2 slices cooked and crumbled

- I Can’t Believe It’s Not Butter, 1/4 cup

- Green Onions, 1/8 cup diced (optional)

- Fat Free Cheddar Cheese, 3/4 cup

- Salt, to taste

- Pepper, to taste

- PAM


Directions

1. Preheat oven to 350 degrees. Prepare small cookie sheet with PAM, set aside.

2. In medium sized bowl, carefully remove the insides of each potato half, making sure to keep the peeling intact. Place the peels on the cookie sheet and set aside.

3. In bowl, with potatoes, mix together all ingredients well. Making sure to “mash” the ingredients together well. Now, spoon even amounts of the “mashed“ potatoes back into their shells. Place back onto cookie sheet.

4. Place in oven for 10-15 minutes. Remove from oven.

5. Serve & Enjoy!



Makes 4 servings. 3 Freestyle points per serving.
