Strawberry Cheesecake Biscuits

A fruity little twist, on one of my very favorite recipes!


Ingredients

- Self Rising Flour, 1 cup

- Plain, Non Fat Greek Yogurt, 1/2 to 3/4 cup

- Egg, 1 medium or large

- Swerve Confectioners Sugar (or sweetener of your choice), 1/4 to 1/2 cup

- Baking Powder, 2 tsp.

- I Can't Believe It's Not Butter, 3 Tbls.

- Sugar Free Cheesecake Pudding, 1 packet instant

- Salt, 1/8 tsp.

- Fresh Strawberries, 7 small or medium sliced

- PAM


Directions

1. Preheat oven to 425 degrees. Grease skillet (I used cast iron), or small pan, with PAM and set aside.

2. In medium sized bowl, mix together all ingredients, until a dough ball forms (it will be sticky). Pour out some ADDITIONAL flour on counter surface and place dough ball directly into the middle. With your hands, kneed the dough ball until it becomes less sticky. Using rolling pin roll out dough ball until its 2 inches thick. Now, using a glass or biscuit cutter, cut out 12 biscuit shapes. You may need to roll out the dough again, to get the full 12 biscuits. Place each raw biscuit into skillet or pan. Spray tops of biscuits with PAM.

3. Place in the oven and bake for 10-12 minutes, or until lightly brown on top. (These biscuits will not rise as much as the original Biscuits.) Serve & Enjoy!



Makes 12 servings. 1 Freestyle point for one serving (2 servings for 3 points; 3 servings for 4 points).
