Copycat Zuppa Toscana Soup

Craving a delicious hot soup, that feels close to home? Look no further!



Ingredients

- 16 ounces Italian Sausage

- 1 Onion, diced

- 3 Cloves of Garlic, minced

- 1 tsp. Italian Seasoning

- 1/2 tsp. Salt

- 1/4 tsp. Black Pepper

- 1/8 tsp. Red Pepper Flakes

- 3 cups Chicken Broth

- 4 Baking Potatoes, diced

- 2 cups Kale, chopped

- 3/4 cup Mootopia Lactose Free Milk

- 1/4 cup Kraft Fat Free Mozzarella Cheese

- 1/4 cup Plain, Non-Fat Greek Yogurt


Directions

  1. In a large dutch oven or soup pot, brown the Italian Sausage.

  2. After the Italian Sausage is browned completely, add in the onion, garlic and seasoning. Cook together until onions are soft.

  3. Add in the broth and potatoes and bring to medium-high heat, almost to a boil. Now bring down to a medium-low heat and allow the potatoes to cook.

  4. Once potatoes are tender, add in the kale and bring to a boil. Continue to stir.

  5. Add in the milk and Greek yogurt, stirring well. Turn off heat and allow to sit for 10-15 minutes.

  6. Place into bowl and top with 1/4 cup mozzarella cheese.

  7. Serve & enjoy!


Recipe makes 6 servings. 9 points per serving.
