South African Roly Poly’s

On our recent trip to Walt Disney World, we ate one of our favorite restaurants, called Boma! These pastries were on the menu and were delicious! I knew I just had to make a WW friendly version! So, here is a little piece of WDW, just for you!

Dough Ingredients

- Self Rising Flour, 2 cups

- I Can’t Believe It’s Not Butter, 1/2 cup (+ additional sprays)

- Swerve Confectioners Sugar, 1/2 cup (or sweetener of your choice )

- Vanilla Extract, 1 Tbls.

- Baking Powder, 3 tsp.

- Eggs, 2 medium or large, beaten

- 2% Milk, 3 Tbls.

- Salt, 1 tsp.

- Plain NonFat Greek Yogurt, 1/8 to 1/4 cup

- Sugar Free Jam, 11 Tbls.


Sugar Water Ingredients

- Water, 1.5 cups

- Swerve Brown Sugar, 1/2 cup

- Swerve Granulated Sugar, 1 cup

- Vanilla Extract, 1 Tbls.

- I Can’t Believe It’s Not Butter, 2 Tbls.


Sugar Water Directions

1. In a medium sized skillet, bring water to a boil. Now, add both sugars, ICBINB sand Vanilla. Whisk together and remove from heat. Whisk until sugars have dissolved. Set aside.


Dough Directions

1. Preheat oven to 350 degrees. Grease a large cast iron skillet or oven safe dish, set aside.

2. In large bowl, mix all ingredients together and form a dough ball. Dough will look as though it won’t stick together. Keep kneading in bowl, until firm dough ball forms. Now, place on NON-FLOURED surface and knead until dough is no longer sticky.

3. Spread a little extra flour into counter surface. Place dough ball in the center and roll out dough, until it’s about 2 inches thick. Spray ICBINB onto dough surface. Now, spread jam onto entirety of dough surface.

4. Roll dough into a long, making a Swiss roll. Jam will ooze out. Now, cut into 12 slices. Place slices into greased skillet. Using a ladle, make sure each slice receives some of the sugar water. You will have extra sugar water left over, DO NOT pour it out, save it.

5. Place Roly Poly’s into oven for 35-45 minutes. Making sure to check them after the 35 minute mark, and until they are done. The dough will bounce back against your touch. Once they are done baking, remove from oven.

6. Using the remaining sugar water, ladle the remaining water over each Roly Poly. Allow them to sit for 10-15 minutes, so the remaining sugar water can be absorbed.

7. Serve & Enjoy!




Makes 12 servings. 2 Freestyle points per serving.
