Homemade Chicken & Dumplings

A healthier alternative to a classic, southern favorite!



Ingredients

- 1 rotisserie chicken, shredded

- 1 can 98% fat free cream of chicken soup

- 2 cups chicken broth

- 2 cups flour

- 1/2 tsp. baking powder

- 1 cup fat free milk

- salt to taste

- pepper to taste

- Dusting flour


Directions

  1. In dutch oven skillet add in the chicken broth and cream of chicken. Use whisk to mix together broth and cream of chicken. Add in shredded chicken.

  2. While the broth and chicken are coming to a boil, mix together the flour, baking powder, milk, salt and pepper. Dumpling dough will be sticky.

  3. Sprinkle the dusting flour on a clean rolling surface. Place your dumpling dough into the center and turn, allowing the flour to be on both sides of the dough.

  4. Roll out the dough to 1/4 inch thickness, or less (if you prefer thinner dumplings).

  5. Use a pizza cutter or knife to cut dough into small squares and/or triangles.

  6. Now place dumplings, one by one, into boiling pot of chicken broth and shredded chicken.

  7. Allow to cook for 10 to 15 minutes, or until dumplings are tender.

  8. Serve & enjoy!
