Parmesan Chicken & Skillet Potatoes

Just a little cheese for your chicken!


Ingredients

- Skinless, Boneless Chicken, 4 breasts

- Hellmanns Lite Mayonnaise, 1/2 cup

- Grated Parmesan, 16 tbls. (4 tbls. used per chicken breast)

- Salt, 2 tsp.

- Pepper, 2 tsp.

- Tarragon, 2 tbls.


Directions

1. Preheat oven to 375 degrees. Spray non-stick spray in oven safe pan.

2. Salt and pepper your chicken breast and place them in pan. Place 4 tbls. of mayonnaise on each chicken breast and rub over chicken. Now, dust chicken with Parmesan. Sprinkle Tarragon over Parmesan dusted chicken breasts.

3. Place in oven for 45 minutes.


Makes 4 servings. 5 freestyle points per serving.

SKILLET POTATOES

Ingredients

- Green Giant Carb Smart potatoes, 3 peeled and cubed

- Onion, 1/4 cubed

- Salt, 1/2 tbls.

- Pepper, 1/2 tbls.

- Chicken Broth, 1/2 cup


Directions

1. Place onions and potatoes in skillet. Season with salt and pepper. Now add the chicken broth. Allow to come to a boil, then reduce heat to medium-low, and let cook until potatoes are cooked through, stirring occasionally.


Makes 3 servings. 2 freestyle points per serving.
