Nanny’s Chicken Salad

Now, this recipe is very dear to my heart! My great-grandmother (Nanny), used to make me this when I was a little girl! I loved spending time with her, I truly was her very favorite and she gave me this recipe before she passed! Now, I want to share it with you...in a WW Friendly version!




Ingredients

- Boneless, Skinless Chicken Breast, two breasts, cooked & shredded

- Light Mayonnaise, 1/4 cup

- Yellow Mustard, 1/8 to 1/4 cup

- Mt. Olive Pickles, 20 pickles cut into small cubes

- Mt. Olive Pickle Juice, 1/8 cup

- Swerve Confectioners Sugar, 1/8 cup (or sweetener of your choice; Optional)

- Eggs, 4-5 medium, hard boiled, peeled & cubed

- Onion Powder, 1/2 tsp.

- Garlic Powder, 1/2 tsp.

- Celery Salt, 1/2 - 1 tsp.


Directions

1. In medium bowl add chicken, mayonnaise and mustard, mix together. Add the pickles and pickle juice, mix again. Now, add the confectioners sugar and seasonings. stir gently, until all ingredients are mixed well.

2. Lastly, add the eggs and mix together gently.

3. Serve & Enjoy!



Makes 4 servings. 1 Freestyle point per serving.



***Serve as a sandwich or with crackers.***
