Mexican Tortilla Casserole

A little layered dish, that is great for parties and makes several servings all at once! Or, can easily be made into a meal for one or two!

Ingredients

- Extra Lean Ground Meat, 1 pound

- 0-Point Corn, 2 cans, drained

- Rotel, 1 can, drained

- 0-Point Black Beans, 1 can

- Tony Chacheres, to taste

- Taco Seasoning Mix, 1 packet

- Fat Free Shredded Cheddar Cheese, 2 cups or 1 package

- 1-Point Tortillas (I use La Tortillas Factory Low Carb Tortillas), 8 tortillas

- PAM


Directions

1. Preheat oven to 400 degrees. Grease small to medium sized pan with PAM.

2. In large skillet or pot, brown ground meat with Tony Chacheres.

3. Once meat is cooked through, add all remaining ingredients, except tortillas and cheese. Mix together well.

4. Layer 4 tortillas on the bottom of the greased pan. Make sure to have the tortillas cover up the entire bottom of the pan (layer them to where they lay besides each other, not right on top of each other. They will be touching.).

5. Take 1/2 of meat mixture and layer on top of the tortillas, now add some shredded cheese. Layer with two more tortillas, then the rest of the meat mixture, then cheese (saving some cheese for the top). Now, add last two tortillas.

6. Place casserole in oven for 10-15 minutes. Remove from oven and sprinkle the remaining amount of cheese on top. Place back in oven for 2 minutes, or until cheese melts. Remove from oven again, cut into 6 servings.

7. Serve & Enjoy!



***May be served with Salsa, Greek Yogurt, Low Fat Sour Cream, Chips, etc. Though the point value of the dish, below, does not include the add-ins.***
