Mashed Sweet Potatoes

A small town Texas girl recipe. Shared from my home to yours!


Ingredients

- Black Gold Legendary Louisiana Sweet Potato, one potato

- Swerve Brown Sugar, 2 Tbls.

- I Can't Believe It's Not Butter, 60 sprays

- Salt, 1/2 tsp.

- Smashmallow, one Cinnamon Churro (optional)

- Water, 2 Tbls.


Other Items Needed

- Ziploc Bag, one quart sized


Directions

1. Cut 1/2 inch off of each side of the sweet potato. Now, using a butter knife place different cuts over the entire potato. Place potato in Ziploc Bag with water and salt. Now, place into the microwave for 5 minutes on high. Make sure to check the potato periodically, by pressing into the center of potato. Center will be soft, when done.

2. Once cooked through, remove sweet potato from microwave and bag and place into small/medium sized bowl. Remove skin from sweet potato. Now, using fork "smash" the potato until desired consistency is reached.

3. Add butter and brown sugar, mix together. Once mixed together, spoon potatoes onto plate. Now, take the Cinnamon Churro Smashmallow and cut into cubes. Place on top of mashed sweet potatoes. Place back into microwave for 30-45 seconds. Remove from microwave and gently stir them into the top of the potato.

4. Serve & Enjoy!



Makes 1 serving. 5 Freestyle points per serving.


***You can use a different brand of sweet potato and marshmallow, though this will most likely change the point value of the dish.***
