An amazing comfort food, made Weight Watcher friendly.
Ingredients
- All purpose flour, 1 1/4 cups
- Skinless Rotisserie chicken breast, shredded / pulled apart, 5 breasts
- Salt, 1 tbls.
- Black pepper, 1 tbls.
- Baking powder, 1 1/2 tsp.
- Onion, diced, 1/2 medium
- I Can't Believe It's Not Butter Spray, 4 Tbls., divided
- Egg, 1 large
- Water, 6 cups
- Tony Chacheres, to taste
- Uncle Chris’ Steak Seasoning, to taste
- Knorr Chicken Bouillon Cubes, 6 cubes
- Swerve Confectioners Sugar, 1/8-1/4 cup (optional)
Instructions
1. Saute the onion and ICBINB in a stock pot. Once slightly browned, add the water and chicken bouillon cubes. Stir to incorporate and allow to simmer on low-medium heat. Take 1/4 cup of flour and mix together in a small bowl, with just a bit of cold water, until it has the same consistency of a thick pancake batter. Add to the pot of, now, chicken broth.
2. Now, add In shredded Chicken. Stir around to make sure it doesn't stick to the bottom of the pot.
3. Mix together 1 and 1/2 cups flour, Swerve and baking powder, toss together. Now, add the eggs and broth, taking your time adding it little by little, so that you get the correct consistency for the dumpling dough. It should look and feel like bread dough. Add a little Extra flour to your counter top, and place dough ball in center. Kneed with your hands, allowing flour to cover outside of dough ball, so that it’s not sticky to the touch, and roll out dough, until it’s about about 1/4 to 1/2 inch thick, then cut into small cubes (I use a rolling pink and pizza cutter for this).
4. Drop in dumplings (dough cubes) one by one and allow to cook In chicken broth. They will all rise to the top and then slowly sink to center, once they are almost done. Allow to cook on low, for about 5-10 minutes, or until done (taste dumpling and it will be cooked through the middle).
