Macaroni & Cheese

A classic Southern favorite, made WW friendly for you to enjoy without the guilt!


Ingredients

- Fiber Gourmet Pasta, 1 bag

- 1% Milk, 1 cup

- Flour, 2 Tbls.

- Fat Free Cheddar Cheese, 1 cup

- Fat Free Mozzarella Cheese, 1 cup

- Plain Non-Fat Greek Yogurt, 1/2 cup

- I Can’t Believe It’s Not Butter, 1/4 cup

- Salt, to taste

- Pepper, to taste

- Garlic Powder, to taste

- Onion Powder, to taste


Directions

1. In large pot, start water to boil. Once it comes to a rolling boil, add pasta and a dash of salt. Allow to completely cook through, then drain. Rinse with cold water, drain again and set aside.

2. In large skillet, add ICBINB and flour and whisk to create roux. While continuously whisking, pour in milk slowly and bring to a medium heat. Add seasonings, then both types of cheese and Greek Yogurt. Remove from heat.

3. Into cheese mixture, gently fold in pasta with spatula. Allow to sit for 5-10 minutes, so that the sauce may thicken.

4. Serve & Enjoy!



Makes 8 servings. 3 Freestyle points per serving.

I’m so glad you liked it! I almost added the powdered mustard as well, but thought I’d leave it out for this round/recipe, as some don’t like it...you’re welcome to add however much you like! 🤗

I can’t lie. I love Mac and cheese and I was super skeptical about this recipe. But to my surprise it was DELICIOUS! I added 1/4 tsp powdered mustard and that put it right over the top! Yummm!
