Korean Beef Bowl

Just because you want to be healthy, doesn’t mean your food should be bland!



Korean Meat Ingredients

- Extra Lean Ground Meat, 1 Pound

- Onion, 1/2 medium onion minced

- Sesame Oil, 1 tsp.

- Garlic Powder, to taste

- Onion Powder, to taste

- Reduced Sodium Soy Sauce, 2 Tbls.

- Red Pepper Flakes, 1 tsp.

- Dried Ginger, 1 tsp.

- Salt, to taste


Sauce Topping Ingredients

- Light Mayonnaise, 1/4 cup

- Sriracha Sauce, 1 Tbls.


Other Ingredients Needed

- Lettuce

- Matchstick Carrots

- Sesame Seeds (optional - adds one point to total below.)

- Minute Rice, 2 cups prepared (each bowl getting 1/2 cup.)


Directions

1. In large skillet add in sesame oil and onions. Cook until onions start to become soft and then add ground meat, soy sauce and seasonings, including ginger. Mix together thoroughly, making sure all seasonings mix into the meat well.

2. Once ground meat has cooked through, remove from heat and set aside.

3. Prepare sauce topping. You may add more Sriracha if desired. Place in small Ziploc bag, seal it and cut a very small hole in one corner of bag.

4. Prepare bowl (in order of how I prepared mine): lettuce, 4 ounces of meat mixture, carrots, rice, drizzle with sauce and lastly sesame seeds! I added the meat, carrots and rice clockwise.

5. Serve & Enjoy!




Makes 4 servings. 10 Freestyle points per serving.



Point Values, are as follows:

- Korean Meat Mixture, 4 ounces: 4 points

- Minute Rice, 1/2 cup: 5 points

- Carrots: 0-points

- Lettuce: 0-points

- Sauce: included in point value for meat.

- Sesame Seeds, 1 tsp.: 1 point

*Total: 10 points*




****Feel free to reduce the amount of rice, use cauliflower rice or omit it completely, as well as the sesame seeds, to reduce the point value of the dish!***
