Homemade Potato Salad

A southern dish, made homemade from my kitchen, to yours!



Ingredients

- Russet Potatoes, 4 medium, peeled and cubed

- Lite Mayonnaise, 3/8 cup

- Mustard, 3 Tbls.

- Sweet Relish, 1/4 cup

- Eggs, 6 medium, boiled and peeled

- Onion Powder, 2 tsp.

- Garlic Powder, 2 tsp.


Directions

1. In a medium/large pot, start potatoes to boil. Once they have cooked through, drain water and allow to rest for 5 minutes.

2. In pot, with boiled potatoes, add all remaining ingredients , except eggs, making sure to mash and mix the potatoes thoroughly, but carefully. You do not want to mash the potatoes too much, you only want to leave a few clumps of potatoes here and there.

3. Now add eggs and mash those throughout the potato mixture. You made add more seasonings if desired, to reach your desired flavoring.

4. Serve & Enjoy!
