Homemade Crepes

I am so very excited to share this recipe with you! I have been working on it for a while and have finally perfected it! Only 3 points of delicious goodness!


Ingredientes

- Self Rising Flour, 1/2 cup

- All Purpose Flour, 1 cup

- Eggs, 4 large

- Salt, 1/2 tsp.

- I Can't Believe It's Not Butter, 2 Tbls.

- 0-Point Greek Yogurt, 1/4 cup

- Baking Powder, 1/2 tsp.

- Swerve Confectioners Sugar, 6-8 tsp.

- Vanilla Extract, 1 tsp.

- Fat Free Milk, 1 cup

- PAM


Other Items Needed

- Blender

- Skillet


Directions

1. Using a medium to large sized skillet, spray thoroughly with PAM and allow it to come to a medium-high heat on the stove top.

2. In blender, mix together all ingredients until they are a thin version of pancake batter.

3. Take slightly more than 1/3 cup crepe batter and place it into the pre-heated skillet. Using your wrist, turn the skillet allowing the batter to cover the entire bottom of the skillet. It will look like a very thin pancake. Flip and allow to cook evenly on both sides. Sides will be slightly brown, when done. Remove from skillet and place desired ingredients (fruit, etc.) to inside of crepe. Fold into a "burrito" shape. (Repeat same steps when making more than one Crepe. You must use PAM, each time in the skillet, prior to adding Crepe batter.)

4. Serve & Enjoy!



Makes 8 servings. 3 Freestyle points per serving.
