Who doesn't love a delicious crab cake?!
Ingredients
- Hellmanns Lite Mayonaisse, 3 tbls.
- Egg, 1 medium
- Fresh lemon juice, 4 tsp.
- Crushed red pepper flakes, 1/8 tsp.
- Dried tarragon, 1 tsp.
- Uncooked scallions, 1 tbls.
- Lump crabmeat, 8 oz.
- I Can't Believe It's Not Butter, 1 spray
- Club reduced fat crackers, 10 crackers
Instructions
1. Mix together all ingredients, except crab meat. Now, gently fold in crab meat, being careful not to break up meat.
2. Crush crackers and gently fold into meat mixture, a little at a time, to make sure you have the desired consistency for crab cake.
3. Heat ICBINB in skillet, on medium heat. Add in patties and cook on each side, until browned and crispy. Serve & enjoy!
Makes 4 servings. 2 Freestyle points per serving.
CRAB CAKE SAUCE
Ingredients
- Hellmanns Lite Mayonnaise, 3 tbls.
- Tapatio hot sauce, 1 tsp.
- Fresh lemon juice, 1 tbls.
- Dried Tarragon, 1 tsp.
- Red pepper flakes, 1/2 tsp.
- Heinz spicy brown mustard, 1 1/2 tsp.
- Sukrin gold, or other low calorie sweetener, 5 tsp.
Directions
1. Mix all ingredients together, in a small bowl. Serve with crab cakes.
