General Tso's Chicken & Chow Mein

General Tso's Chicken

Ingredients

- Boneless, Skinless Chicken, 4 Breasts

- Soy Sauce, 1/2 cup, divided

- Corn Starch, 1/8 cup and 1 Tbls.

- Dried Ginger Root, 1 piece

- Minced Garlic, 2 Tbls.

- Scallions, 4 stalks, white and green diced and divided

- Chili Garlic Sauce, 4 Tbls.

- Chicken Broth, 1 cup

- Hoisin Sauce, 3 Tbls.

- Sesame Oil, 1 Tbls.

- Tony Chacheres, 1/2 Tbls.

- Egg White, 1 large


Directions

1. Mix together egg whites, corn starch 1/2 cup of soy sauce and whisk together. Now, dice chicken into cubes and add to soy sauce and egg white mixture, making sure all chicken is coated well.

2. In medium pot saute' garlic, ginger and the whites of the scallions, for 2 minutes. Now, add chicken broth, remaining soy sauce, chile garlic sauce and hoisin sauce. Bring to medium heat, then reduce to low.

3. In Wok or large skillet, add sesame oil and chicken mixture. Stir periodically, making sure the chicken cooks thoroughly. Once chicken is almost completely done cooking, add the garlic and ginger sauce, to Wok or skillet, stirring well. Bring to a boil, then down to a low-medium heat, allowing the sauce to thicken. Add Tony Chacheres, for a little extra flavor, and stir.

4. Serve & Enjoy!


 

Chow Mein

Ingredients

- Colavita Angel Hair, 4 nests

- Carrot, 1 medium or large, Julienned

- Cabbage, 4 leaves, sliced thin

- Onion, 1/2 cup, sliced

- Sesame Oil, 1 tsp.

- Scallions, 1 stalk, diced

- Chicken Broth, 1/8 cup

- Soy Sauce, 3 Tbls.

- Hoisin Sauce, 1 Tbls.

- Tony Chacheres, 1 to 2 tsp.


Directions

1. In medium pot, start water to boil and allow noodles to cook through. Once cooked through, drain hot water and add cold water. Allow noodles to sit in cold noodles, set aside.

2. In medium skillet add carrots, cabbage, onions and sesame oil. Saute' for two to three minutes. Now add soy sauce, chicken broth and Hoisin sauce. Stir over medium heat, allowing sauce to come to a light boil. Reduce to low heat.

3. Drain the cold water from the noodles and add the noodles to the soy sauce mixture. Stir together and allow to heat on low, for 5 minutes.

4. Serve & Enjoy!
