Fluffy Puff Cookies

WHAT? A 0-point dessert? YES! You're not dreaming! Make these and enjoy a sweet, guiltless treat!



Ingredients

- Egg Whites, 3 medium egg whites

- Swerve Granular Sugar, 1 cup

- Lily's Chocolate Chips, 199 chips

- White Vinegar, 1/2 tsp.

- Vanilla Extract, 1 tsp.

- Salt, 1/4 tsp.


Directions

1. Preheat oven to 300 degrees. Grease cookie sheet and line with parchment paper (they do not bake well without the parchment paper). Lower your home air conditioner temperature to 65 degrees (you're not imagining this, these cookies do not do well in heat, especially while being prepared and while baking).

2. Using mixer, add the egg whites and whip to soft peaks. Now, gradually add the sugar, vinegar and vanilla WHILE continually whipping egg whites to stiff peaks.

3. Once stiff peaks have been reached, remove mixer. Now, add the chocolate chips and FOLD IN with a spatula.

4. Drop by spoonfuls onto the prepared cookie sheets.

5. Bake for 25-30 minutes, depending on your oven. Do not open your oven until the cookies have at least been baking for 25 minutes. They will be slightly browned on top and will bounce back to the touch. Remove from the oven and allow to cool for 3 minutes. While they are still warm, gently remove them from the parchment paper.

6. Serve & Enjoy!
