Filipino Bihon Pancit

Have you ever had Filipino food? It’s delicious!

Bihon Pancit Ingredients

- Boneless, Skinless Chicken Breast, 4 breasts cooked and shredded

- Peanut Oil, 1 Tbls.

- Minced Garlic, 2 Tbls.

- Onion, 1 small on finely diced

- Rice Noodles, 8 ounces

- Vermicelli Noodles, 8 ounces

- Celery, 2 stalks finely sliced

- Carrots, 2-3 carrots finely sliced

- Cabbage, 1/4 to 3/4 cup finely sliced

- Scallions, 1/2 cup finely diced

- Salt, to taste

- Pepper, to taste


Bihon Pancit Sauce

- Chicken Broth, 2 cups

- Regular Sugar, 1 tsp. (May substitute for 0-calorie sweetener, if desired.)

- Reduced Sodium Soy Sauce, 5-8 Tbls.


Directions

1. In a large pan over medium heat, add oil and chicken, stir together to combine. Transfer to a plate and set aside. Add garlic and onion and cook until they become soft. Add the cooked chicken back to the pan and season with a little salt and pepper. Now, Stir in the veggies and cook until a little tender.

2. Add all the ingredients for the pancit sauce to the pan with chicken and vegetables. Bring to a boil. Now, add both types of noodles and stir until all the noodles are coated with the sauce. Continue to stir and cook until the noodles are tender (this should take right around 4-5 minutes). If needed, you can add more chicken broth (or water) if dry, before the noodles are tender. You can choose to season with more salt, pepper and soy sauce if desired, just make sure to account for the possible point change. 3.Serve & Enjoy!

(Serve immediately with lime wedges.)




Makes 4 servings. 7 Freestyle points per serving.
