A new Twist on a classic Tex-Mex favorite!
Ingredients
- Mission Extra Thin Corn Tortillas, 12 Tortillas
- 0-Point Fat Free Refried Beans, 1 can
- Fat Free Mozzarella Cheese, 1 package of 2 cups
- 0-Point Salsa Verde or Green Salsa, 1/2 to 1 bottle
- Boneless, Skinless Chicken Breast, 2-3 breasts cooked and shredded
- Uncle Chris‘ Steak Seasoning, to taste
- Garlic Powder, to taste
- PAM
Directions
1. Preheat oven to 350° and grease, with PAM, a small to medium sized baking pan. Set aside.
2. In medium sized pot, mix together beans, garlic and Uncle Chris’ Steak Seasoning. Mix together and remove from heat. Set aside.
3. Warm Tortillas is microwave or on the stove top, making them soft and pliable.
4. Take one tortilla, spoon about 2 Tbls. of beans onto the tortilla, followed by the cheese and chicken. Now, roll the tortilla making an ”enchilada.” Repeat, until all tortillas are filled, rolled and placed into baking pan. You will
have extra beans and cheese, save for later. (Optional: Place remaining beans onto tops of enchiladas.). Place in oven for 5-10 minutes; make sure they do not burn. Remove from oven and add remainder of shredded cheese on top. Place back into oven and allow cheese to melt. Remove from oven, again, and pour Salsa Verde on top.
5. Serve & Enjoy!
