Classic Chicken Alfredo

You can never go wrong with a classic chicken Alfredo recipe!


Ingredients

- 2 to 4 chicken breasts, cut into strips

- 1 8-ounce box of Fiber Gourmet Rotini Pasta

- 1 8-ounces Neufchatel Cheese

- 1/2 cup Mootopia Lactose-Free Whole Milk

- 1 to 2 tsp. non-calorie sweetener (optional)

- 1/2 cup plain non-fat Greek yogurt

- Uncle Chris' Steak Seasoning

- Garlic Powder

- Onion Powder

- Italian Seasoning (we use Italian Bread Seasoning)

- Creole Seasoning

- Red Pepper Flakes (we use just a dash)

- Dried Chives

- Salt



Directions

  1. In a large pot, start water to boil and add in a few dashes of salt. Once water has come to a boil, add in your uncooked pasta. Allow to cook through. Drain and set aside.

  2. In dutch oven (or large skillet) place chicken strips and season with steak seasoning, chives and creole seasoning. Allow to cook through. Remove chicken from dutch oven, cut into cubes and set aside.

  3. In the same dutch oven, on low heat, add in the cheese, milk and Greek yogurt. Stir with a whisk, until there are no clumps. Add in the red pepper flakes, garlic powder, onion powder, Italian seasoning and more chives. Stir well. Now add in the non-calorie sweetener and continue to stir. Allow to sit on low heat, stirring occasionally, until sauce has thickened. Turn the stove burner off.

  4. Once the sauce has thickened, fold your pasta into the sauce. Now fold in the chicken.

  5. Serve & enjoy!
