Chocolate Chip Biscuits

WHAT? Biscuits, chocolate chips AND chocolate drizzle? Yes please!



Biscuit Ingredients

- Self Rising Flour, 1 cup

- Plain Non-Fat Greek Yogurt, 1/4 cup

- Lily’s Chocolate Chips, 146 chips

- Swerve Confectioners Sugar, 3/4 cup

- Vanilla Extract, 1 Tbls.

- Hershey‘s Cocoa, 1/2 Tbls.

- Baking Powder, 1 tsp.

- I Can’t Believe It’s Not Butter, 2

- Egg, 1 medium

- PAM


Chocolate Drizzle Ingredients

- Lily’s Chocolate Chips, 53 chips

- Swerve Confectioners Sugar, 1/4 cup

- Vanilla Extract, 1 tsp.

- I Can’t Believe It’s Not Butter, 2-4 Tbls.


Directions

1. Preheat oven to 425 degrees. Grease skillet (I used cast iron), or small pan, with PAM and set aside.

2. In medium sized bowl, mix together all ingredients until a dough ball forms. Pour out some flour on counter surface and place dough ball directly into the middle. With your hands, kneed the dough ball for 1 minute. Using rolling pin roll out dough ball until its 2 inches thick. Now, using a glass or biscuit cutter, cut out 11 biscuit shapes. You may need to roll out the dough again, to get the full 11 biscuit count. Place each raw biscuit into skillet or pan. Spray tops of biscuits with PAM.

3. Place in the oven and bake for 12-15 minutes, or until lightly brown on top.

4. Allow biscuits to cool slightly, while preparing drizzle (needs to be somewhat soft and runny). Once cooled, drizzle chocolate glaze on top of each biscuit.

5. Serve & Enjoy!



Makes 11 servings. 2 Freestyle points per serving, or 3 Freestyle points for two servings.
