A few different cultures, wrapped up into one delicious WW friendly dish!
Ingredients
- Boneless, Skinless Chicken, 6 thin sliced breasts
- Plain, Nonfat Green Yogurt, 2 cups
- Ground Cumin, 1 1/2 Tbls.
- Minced Garlic, 3 Tbls.
- Salt, 1 Tbls. (+ extra for Seasoning)
- Paprika, 2 Tbls.
- Cayenne Pepper, 1 Tbls.
- I Can’t Believe It’s Not Butter, 3 Tbls.
- Fresh Lime Juice, 2 1/2 Limes (+ 1/2 additional lime)
- Tony Chacheres, 1-2 Tbls.
- Onion, 3 medium, sliced
- Roma Tomatoes, 3 sliced
- Pepper, to taste
- PAM
Directions
1. In large bowl, mix together yogurt, cumin, garlic, salt, paprika, cayenne, ICBINB, Tony’s and lime juice. Mix well.
2. In large Ziploc bag, add yogurt marinade and chicken. Allow to marinate for 1-2 hours (can also marinate overnight).
3. Preheat oven to 400 degrees. Grease a cookie sheet with PAM, set aside.
4. Remove chicken from bag and place onto greased baking sheet. Place in oven and allow to cook for 1 hour, or until cooked through. Turn chicken half way through cooking time. Remove from oven and slice or cube. Set aside.
5. In large skillet, place sliced onions and tomatoes and bring to medium heat. Using the additional lime, squeeze juice onto onions and tomatoes. Now, add salt and pepper to taste, as well as 2 Tbls. of ICBINB and PAM (spray PAM directly onto onions and tomatoes). You may also add a little Tony’s for an added kick.
6. When the onions and tomatoes become soft, add the chicken to the skillet. Allow to sauté over medium-low heat, until incorporated together. Remove from heat.
7. Serve & Enjoy!
