Chicken Fajitas

Who said you can’t have “Mexican Food” on WW?! NO ONE!

Marinade Ingredients

- Boneless, Skinless Chicken Breast, 6 breast’s cubed or sliced

- Cumin, 1 tsp.

- Tony Chacheres Creole Seasoning, 1 Tbls.

- Red Pepper, 1/2 tsp. (Optional)

- Garlic Powder, 1 tsp.

- Onion Powder, 1 tsp.

- Fresh Lime, 2 limes juiced

- Fresh Orange, 1/2 of one orange juiced


Marinade Directions

1. In medium sized bowl or large Ziploc bag, mix together all ingredients. Make sure all ingredients have been mixed together thoroughly, so that every piece of chicken has flavor.

2. Place in fridge anywhere from 1 hour to 4 hours, or overnight if desired.


Fajita Ingredients

- Red Sweet Peppers, 2-4 diced

- Orange Sweet Peppers, 2-4 diced

- Yellow Sweet Peppers, 2-4 diced

- Onion, 1 onion diced

- Marinated Chicken

- Salsa Verde, 1/4 cup

- Toby Chacheres

- I Can’t Believe It’s Not Butter, 3-5 Tbls.


Fajita Directions

1. In large skillet add all peppers, onions and ICBINB, Tony Chacheres and mix together. Allowing peppers and onions to slightly brown and become soft.

2. Once they have become soft, remove from skillet and add chicken to same skillet. Allow chicken to brown. The juice from the chicken and marinade will need to be drained half way through cooking the chicken.

3. Once Chicken is almost completely done cooking, add the salsa verde and stir together. Now, add the browned, soft peppers and onions. Stir again. Remove from heat and allow to sit for 5 minutes. This helps with the flavor of the chicken, peppers and onions.

4. Serve & Enjoy!
