There is nothing wrong with enjoying a little but of comfort food, especially when it's WW friendly!
Ingredients
- Boneless, Skinless Chicken Breast, 3 - 4 breasts cooked
- Fiber Gourmet Penne Pasta, one package
- Frozen Broccoli, 2 cups sauteed
- I Can't Believe It's Not Butter, 1/4 cup divided
- White Pepper, 1 tsp.
- Uncle Chris' Gourmet Steak Seasoning, 2 - 4 tsp. (and extra for chicken)
- Tony Chacheres Creole Seasoning, 2 tsp.
- Garlic Powder, 1 tsp.
- Cayenne Pepper, 1/2 - 1 tsp.
- Fat Free Cream Cheese, 8 oz. block
- Fat Free Milk, 1/2 cup
- Salt, to taste
- Pepper, to taste
Directions
1. Season chicken breasts with Uncle Chris' Steak Seasoning. Place in air fryer on 360 degrees for 20 minutes. Once cooked through, remove from air fryer and cut into strips. You may make the pieces as big, or as small, as desired. Set aside.
2. While chicken is cooking, saute' broccoli with 1/8 cup of ICBINB in large skillet. You may add some salt and pepper, for seasoning, if you would like. Once fully cooked, remove from heat and set aside.
3. In medium pot, boil water with a pinch of salt. Once it has come to a boil, add in the pasta. Allow it to cook through. Once completely cooked, remove from heat and rain excess water. Rinse with cool water, then drain again. Set aside.
4. In large pot or dutch oven skillet, add the cream cheese and stir with whisk, allowing it to melt. Once it has almost completely melted, with a few chunks, add in the milk and the entirety of seasonings, as well as the remaining 1/8 cup ICBINB. Stir with whisk until its thoroughly mixed together. Remove from heat.
5. In the large pot with the sauce, add in the noodles first. With spatula, mix the noodles into the sauce. Now, add the chicken and broccoli. Stir with spatula, making sure all noodles, broccoli and chicken are coated with the alfredo sauce.
6. Serve & Enjoy!
Makes 4 servings. 5 Freestyle points per serving.
***Serve pasta topped with 1/4 cup Fat Free Mozzarella Cheese and with a side of my Cheddar Bay Biscuits!***
