Cajun Chicken & Spinach Pasta

A classy, quick and easy dish that will make your dinner look amazingly extravagant!




Ingredients

- Boneless, Skinless Chicken, 5 breasts

- I Can't Believe It's Not Butter, 50 sprays

- Fat Free Mozzarella Cheese, 1/2 cup

- Flour, 2 tbls.

- Fiber Gourmet Pasta, 8 ounces or one package

- Fat Free Milk, 2 cups

- Fresh Spinach, one stalk, chopped

- Roma Tomatoes, 2 whole tomatoes, diced

- Minced Garlic, 2 tbls., divided

- Tony Chacheres Creole Seasoning, to taste

- Salt, to taste

- Pepper, to taste

- Cayenne Pepper, 1 tsp.


Directions

1. In skillet, brown chicken with ICBINB, 1 tablespoon of minced garlic, salt, pepper and Tony Chacheres Creole Seasoning. Make sure to season chicken on both sides, turning on each side periodically, ensuring the chicken completely cooks through. Remove chicken from skillet and set aside.

2. In medium pot start water to boil. Once at a rolling boil, add pasta and allow to cook through. Drain and set aside.

3. In small bowl, mix together milk and flour with whisk, While pouring milk and flour mixture in skillet, continually whisk in the rest of the seasonings, along with last tablespoon of minced garlic. Bring to a low boil, add spinach and tomato. Allow to simmer on medium heat, allowing spinach to cook and tomatoes to become soft. Add in pasta and stir.

4. Top pasta and sauce with chicken. Scatter cheese on top, allow to melt.

5. Serve & Enjoy!
