Baked Tomato Soup

Sometimes you just need that delicious comfort food, without all of the calories! Well, here is a recipe you're going to love!





Ingredients

- 4 cups cherry or grape tomatoes

- 2 heads of garlic

- 1 whole yellow onion

- 1 shallot

- 1/2 to 1 cup chicken broth

- 1 cup Mootopia Lactose Free Milk

- Pepper

- Salt

- I Can't Believe It's Not Butter

- Pam


Directions

  1. Preheat the oven to 350 degrees. Grease a large cookie sheet with Pam.

  2. Cut tops off of garlic. Slice onion into quarters.

  3. Place tomatoes, garlic (cut tops right side up) and onions onto the greased cookie sheet. Spray again with Pam and ICBINB. Add desired amounts of seasoning.

  4. Place in the oven for 30 minutes to an hour, or until tomatoes, garlic and onions are lightly browned/toasted.

  5. Add shallot and one tablespoon of ICBINB to skillet. Allow to simmer on medium, until soft.

  6. Add into the skillet all tomatoes and onions. Take the heads of garlic and squeeze baked garlic into the same skillet with the shallots, tomatoes and onions.

  7. Saute together, allowing to simmer on low/medium for 5 minutes.

  8. Remove everything from the skillet into a blender. Add the chicken broth, starting with 1/2 cup. If you think it's too thick, you may add more chicken broth until you have reached your desired consistency.

  9. Pour soup back into the same skillet you used to saute. Place on medium heat and add in milk. Stir until all milk has been incorporated into soup.

  10. Serve & enjoy!



*You're welcome to use a different type of milk, just please make sure to adjust the point value of the recipe.
