Ingredients
- Flour, 1 cup
- Self Rising Flour, 1/2 cup
- Salt, 1/2 tsp.
- Baking Powder, 2 tsp.
- 0-Point Greek Yogurt, 1/3 cup
- Egg, 1 medium
- Fresh Blueberries, 1 cup
- Swerve Brown Sugar, 1/4 cup
- Swerve Confectioners Sugar, 1 cup
- Fat Free Milk, 1/2 cup
- Vanilla Extract, 1 Tbls.
- WW Maple Brown Sugar Instant Oatmeal, 1 container (optional)
- PAM
Other Items Needed
- Cupcake Pan/s
- Cupcake Liners, 15 total
Directions
1. Preheat oven to 350 degrees. Place cupcake liners in cupcake pans, and spray liners lightly with PAM. Set aside.
2. In mixer, combine all ingredients together, except blueberries and WW Maple Oatmeal. Once all ingredients are thoroughly mixed together, mix in blueberries, by hand.
3. Now, taking a cookie scoop, or large table spoon, fill cupcake liners 3/4 full. You will have enough for 15 muffins. You will need to scrape the mixing bowl.
4. Sprinkle the WW Oatmeal over each muffin, evenly.
5. Place in oven for 20-25 minutes, or until lightly browned on top.
6. Serve & Enjoy!
Makes 15 servings. 2 Freestyle points per serving.
***You may leave the WW Maple Brown Sugar Oatmeal, out of the recipe, though it may change the point value of each muffin.***
