In what other lifestyle can you have all of this and it actually be healthy for you?!
Ingredients
- Banana's, 3 medium, frozen and thawed
- Baking Soda, 1 tsp.
- Ground Cinnamon, 1 tsp.
- Eggs, 3 medium
- Old Fashioned Oats, Uncooked, 1/2 cup
- Pecan Halves, 1/4 cup, chopped
- Lily's Dark Chocolate Chips, 120 chips
- Vanilla Extract, 1 Tbls.
- Sukrin Gold, 1/4 cup
- Swerve Confectionery Sugar, for dusting
Directions
1. Mix together all ingredients, except pecans and chocolate chips. Mix well.
2. Now add the pecans and chocolate chips, folding them into the batter.
3. Prepare a 12 cup cake pan, with liners. Dip 1/4 cup of the batter into each cup cake liner.
4. Bake at 350 degrees, for 20-30 minutes, until lightly brown on top.
(Be sure to check every once in a while, as all ovens bake differently. When you check on the muffins, the tops should slightly bounce back when pressed on with your finger.)
5. Remove from the oven and dust each one with the confectionery sugar. Make sure to remove the muffins (with their liners) from the pan, as they will continue to bake if you leave them in the hot pan.
Makes 12 servings. 1 freestyle point per serving.
