A traditional Salvadoran side dish...made WW Friendly from my little family, to yours!
Ingredients
- Corn Stalks, 5 medium cooked and shucked
- Lite Hellman’s Mayonnaise, 1/4 cup
- Nonfat, Plain Greek Yogurt, 1/4 cup
- Cayenne Pepper, 2 tsp.
- Lime Juice, 1/2 of one medium lime
- Fresh Cilantro, 1-2 Tbls.
- Grated Parmesan Cheese, 2 Tbls.
- Minced Garlic, 1 Tbls.
- Salt, to taste
- Pepper, to taste
Directions
1. In large skillet add in corn, seasonings, lime juice, cilantro and Parmesan cheese. Mix together thoroughly, making sure it is mixed well.
2. Add the mayonnaise and Greek Yogurt. Again, mix well. Remove from heat and allow to sit for 3-5 minutes.
3. Serve & Enjoy!
Makes 4 servings. 2 Freestyle points per serving.
